The Mini Andouille au lard à l'Ancienne consists essentially of so-called closed pork stews rolled out on a heart of lean pork belly. After cooking, the Mini Andouille with bacon is smoked only with beech wood without any other additive or colouring.
The Mini Andouille with bacon can be eaten cold or hot, as an aperitif or in slices grilled on the barbecue in an andouillette style.
