The Mini andouille sausage with bacon and Espelette pepper consists essentially of so-called closed pork stews rolled out on a heart of lean pork belly.
Built like a real Andouille de Guémené à l'Ancienne, the sixteen pots are unrolled and peppered according to an entirely manual process.
After cooking, the Mini andouille with bacon and Espelette pepper is smoked only with beech wood without any other additive or colouring. Mini andouille sausage with bacon and Espelette pepper can be eaten cold or hot, as an aperitif or in slices grilled on the barbecue, sausage style.
