Refiner of Savoyard cheeses, Jean Le Gléour created the Edelmont company in 1982. He then designed Brézain, a smoked cheese to be melted and shared.

It will take him 4 years to perfect the manufacturing process. The smoked cheese obtained is called "Le Brézain", in reference to the embers and the origin of its inventor (Breizh: Brittany).

Industrial production began in 1992 in smokehouses specially designed for this product. Success was quickly achieved and the small unit installed a few kilometers from Thônes in Haute-Savoie, experienced rapid development.

The Brézain continues to expand and is used in the composition of many dishes with or without cooking such as salads, pizzas, raclettes, fondues, gratins, pies or even in aperitifs.

Creamy, tasty and original, Brézain is a smoked cheese from Haute-Savoie, ideal for sharing a convivial moment. With its roundness and curved shape, it evokes a gourmet cake that reveals a melting and creamy dough to perfection.
