Son and grandson of Jean Pabiot, Alain and Jérôme operate the Domaine des Fines Caillottes.

Planted with Sauvignon grapes, the Estate covers 30 hectares, split into 30 plots of different sizes spread over 5 communes of the Pouilly-Fumé Appellation.

The soils, mainly clay-limestone, are therefore varied: caillottes (limestone), marl with small oysters (fossilized flat stones) and flint. This diversity of terroirs gives the estate's wines their aromatic complexity.
