The know-how of making Epoisses, entrusted by the Cistercian monks to the women of Auxois, was transmitted orally from generation to generation and from mother to daughter. The oldest writings relating to the production of Epoisses date only from the 19th century.
It is a know-how almost unique in France which requires great mastery and a lot of passion. The production technique of Epoisses is now modernized and safe from a sanitary point of view, but the manufacturing process remains the same.
