Mozzarella di buffalo with PDO pasteurized milk - 250g
These Italian cheeses are remarkably fresh. They are produced according to traditional methods, the spinning of which is still done by hand.
Buffalo milk (raw or pasteurized), selected according to PDO rules, is processed there in a very short time in order to preserve its taste (geographical origin Caserta, Salerno, Lazio, Napoli and Foggia).
All mozzarellas are PDO certified. According to a purely artisanal know-how, the burratas di Buffala are composed of a thin dough spun by hand to form a kind of pocket, garnished with a creamy straciatella (this same dough shredded and mixed with cream). The bundles obtained are closed by hand and sealed in boiling water.
