In the heart of Auvergne, nestled at an altitude of 1000m in the volcanic regional natural park, the Fromagerie des Monts du Cantal has been perpetuating the tradition of raw milk cheese since 1928.
It works with milk from the AOP Cantal area and in the mountain area collected from 40 producers in a sustainable approach that respects the environment.
What's more, the cheese dairy has developed a HIGH HERBAGE approach with specifications even stricter than those of the AOP Cantal (feeding only grass and hay and certified noble supplements, collection within 24 hours, specialized and artisanal production: passage to the press volume, long maturation, refining in the cellar, selection, traceability, etc.).
The cheeses are made in Pierrefort and matured in 3 cellars, including the famous Saint-Poncy cellar built in an old railway tunnel.
