A small farmhouse cheese made from raw cow's milk in Cantal, Sénerac is a true cheese of yesteryear.
Each tomme is rubbed and turned by hand every week, to allow for a maturation period of between 3 and 5 months in an underground cellar. This meticulous and long process can be measured and appreciated during the tasting, where aromas of hazelnut, licorice, and wild berries emerge.
Sénerac is the work of a producer who leads his herd himself and, with his slow and precise gestures, accompanies the transformation of the rich and tasty milk into a marvelous cheese.
