This Canigou fir syrup is made by long maceration of fir cones (Abies Alba) in sugar.
The manual harvest takes place in summer, when the ripe pine nuts are full of sap and resin.
They are macerated the same day. After several weeks, the nectar obtained is filtered and then packaged.
Many chefs use it in their culinary preparations, especially desserts and macaroons.
