From the Latin "hay", fennel is a plant native to the Mediterranean basin where it can still be found growing wild by the side of the road or the sea.
Steamed for about ten minutes, it is an ideal garnish for fish and meats such as veal and lamb. It also goes very well with carrots, celery and onions. It can also be prepared as a gratin or blended to make a tasty soup.
Do not hesitate to add garlic, they go well together. Fennel is also prepared braised, in butter, with a little sugar which gently caramelizes it. It can be slipped into foil (as a carpet under salmon or sea bass) or stewed with tomato and olive oil.
