The Sainte-Maure de Touraine can be presented under different aspects. White, covered with a fine white flower, it gradually takes on, as it matures (10 days minimum), bluish-gray tints, generally from about twenty days. But it is also made ashy with vegetable charcoal. Initially, this technique made it possible to better protect it.
It is very convenient to consume on a tray. Its delicate bouquet struggles to express itself in the kitchen: for hot dishes, it is better to use generic “Sainte-Maure”. It deserves to be consumed as it is, simply well accompanied. With avocado for example, in millefeuille: a slice of cheese, a slice of avocado, etc.
