Smoked pork hind shank ±800g

Pork knuckle is a bony, gelatinous piece of pork meat that is located in the legs of the animal. This is the piece of meat that surrounds the tibia bone. There are two types: foreshank and hindshank. Since the foreshank is located below the pork's shoulders, it is much less meaty than the hind shank, which is located below the ham.
