The Dehydrated Egg White Powder can be incorporated into fresh or frozen egg whites, up to 2 to 5% of the quantity of egg whites.

Gallia Dehydrated Egg White will thus prevent your egg whites from graining, for an always perfect texture.

Egg White Powder is therefore ideal for whipped eggs, meringues, or even nougat.

Having a strong foaming power during beating, Dehydrated Egg White must be rehydrated before use.

For this, you must respect a certain dosage when rehydrating your Gallia Egg Whites, count:

- 150 g / L of water for mousses and meringues

- 160 g / L of water for confectionery

- 75 g / L of water for wetting for macaroons and almond ovens

Ingredients: Pasteurized dried chicken egg white, stabilizer: xanthan gum (E415), bulking agent: triethyl citrate (E1505)

Storage: in a dry place, away from heat.

Recommended dosage: 2 to 5% compared to the quantity of egg whites
