Super Neutrose is a stabilizer mainly used for making sorbets and ice cream.
Its anti-crystallizing property allows it to absorb residual water from mixes, made up of fresh or reconstituted milk, sugar, flavourings, cream or butter. It corrects the viscosity of the mixes, improves the smoothness and fineness of taste, gives smoothness, brings an appreciable gain in expansion and delays the melting of ice cream bars.
Improves velvety texture, finesse, gustatory smoothness by avoiding crystals.
Dosage: 3 to 5g per litre.
