The stabilizer is a food additive well known to ice cream makers and professional pastry chefs. Indeed, it improves the ice cream in every way, without having to modify the dosages of the recipe. It is an emulsifier for making ice cream and whipped cream.

The stabilizer gives the ice cream more smoothness, it prevents the formation of ice crystals and improves the viscosity of the mixture.
