Gelling agent for pastry topping based on fruit pulp. Filling products, pastry toppings with undiluted fruit.
Can be used in aqueous or fruity environments. Gives a firm, shiny gel with a pleasant texture.
The topping made with this pectin is reversible and withstands several successive overhauls and gellings while retaining its qualities.
Instructions for use pectin NH for topping:
Pre-mix dry with part of the sugar, disperse in water, stirring quickly to avoid the formation of lumps. Complete dissolution is obtained after approximately 15 minutes.
Average use dose: In general from 0.8 to 2% depending on the pulp content (10 g/Kg of topping).
