Ascorbic acid, also called vitamin C, comes in the form of white to yellowish colored crystals.
Used for these antioxidant properties, it helps block the oxidation of foods and therefore preserve their color. It also increases the elasticity of your bakery and Viennese pasta.
Limited use dietary antioxidant. Flour corrector (increases elasticity and tolerance, activates dough maturity, strengthens the gluten network).
Usual dose: 300 to 500mg/kg.
