Pectin allows the production of thick-textured jams, sauces for toppings, fruit purées, gelled milk desserts, fillings based on non-gelled jams, dietetic and hypoglycudic products, milk jams, etc.

Pectin 325 NH95 gels in the presence of calcium ions, giving a non-reversible gel on heating.

Dosage Pectin 325 NH95: 0.3 to 0.5 g/kg or 4 to 5 g/l of milk
