Invert sugar, also called trimoline, is a pasty white to pale yellow substance, very creamy, with a typical sweet smell and taste.

This paste is made from beets and guaranteed gluten-free, this liquid invert sugar syrup is mainly composed of glucose and fructose in equal parts.

It gives structure, body and texture to pasta. It allows the lowering of the relative humidity of equilibrium but also the formation of a crunchy and golden crust, to obtain and maintain the softness and freshness of the finished products (conservation), to strengthen and preserve the aroma, to avoid drying out after defrosting, to provide sweetening substances which favorably influence the flavour, color and texture.

It is used in bakery, pastry and more generally in cooking for its many qualities.

It allows in particular:

- the establishment of a good structure, to give body and to improve the texture of the pasta.

- a lowering of the equilibrium relative humidity.

- the formation of a crunchy and golden crust.

- to obtain and maintain the softness and freshness of the finished products (conservation).

- to strengthen and preserve the aroma.

- avoid drying out after defrosting.
