The recipe for authentic Belgian fries with beef breast in two successive cooking baths: cut and dry your potatoes.
Heat your beef fat to 140°C to dip your fries in it for the first time for 6 to 8 minutes depending on the cut and variety chosen.
Drain and let stand. Before serving, increase the temperature to 175°C and cook quickly for 2 to 3 minutes.
