A small village in the Basque Country, Itxassou is well known to connoisseurs for its famous black cherry jam. The Beekeeper of Itxassou perpetuates a traditional and family know-how. Its traditionally prepared jams contain 80% whole fruit and are guaranteed pectin-free. To revive the natural flavors of yesteryear, these jams follow the peasant recipes of his "Amatxi" (Basque grandmother).
A traditional Basque shepherd's dessert, this delicacy with whole cherries is eaten with a slice of sheep's cheese. It is the fruit of a peasant recipe from my "Amatxi" (Basque grandmother).
