This climbing bean is produced in the region of Tarbes, in Bigorre. Cultivated as before, it is left to dry naturally on the plant and is picked up again and again by hand.

Thanks to its thin skin, its cooking is accelerated, the water absorption improved. The grains, firm and whole, swell well, without bursting and are surprisingly light. Their skin blends with the flesh in a tasty smoothness. These exceptional beans can be eaten in summer and winter alike, as a starter, salad or main course, depending on your inspiration. Soak them overnight in 2.5 times their volume of cold water (which makes them double in volume). Bring to a boil in fresh water then cook over low heat for about an hour. Salt halfway through cooking.
