Able to be cooked in many different ways, Soissons beans can be served as a side dish – with meat or fish – or as the main ingredient in a vegetarian dish or mixed salad.
Directions for use: Soak the beans for about 12 hours. Drain them and place them in your cooking utensil. Cover the beans with cold water; do not add salt. Bring to a boil and simmer for 1.5 hours. Add salt at the end of cooking. Serve hot or cold.
