The chanterelle, also called ciborium chanterelle, grows in light oak forests. With its funnel-shaped yellowish cap and creamy white flesh, it has a deliciously fruity flavor: to be expected in the preparation of stuffings or sauces. 40g of dried chanterelles are equivalent to 175g of fresh chanterelles. The mushroom mixture must be soaked for at least one night (12 hours) in 5 times its weight in volume of water at an ideal temperature of 4°C. After rehydration, you can use them like fresh mushrooms.
