A traditional charcuterie that young and old appreciate for its taste that goes wonderfully with apples... potatoes of course, but also apple fruit.
Our Charcutiers begin by slowly browning fresh onions in a pot. At the end of cooking, spices and pork fat are added. It is this mixture that will give all its flavor to the pudding.
The blood is integrated into this mixture which will then be pushed into a natural casing.
Once formed, the sausages go through two successive and complementary cooking stages: cooking in broth then steaming.
