The Cervelas d'Alsace is smaller than the meat sausage (Fleischwurst). Its composition is the same but the way to taste it is a little more varied.
You can enjoy cold Cervelas as an aperitif or as a starter in a salad with Gruyère cheese and a good Alsatian vinaigrette. Or hot, pan-fried and rolled up in country smoked bacon then garnished with a generous slice of Gruyère or Emmental. A few minutes in the pan or in the oven to grill the bacon and bring all the fatty and smoky taste to Cervelas as well as to melt the cheese.
All accompanied by an Alsatian craft beer or a white wine from the region and you are in Alsace.
