This authentic pure pork brass is a unavoidable charming specialty of Alsace.

It is a small sausage of meat and grazed pork cup, embossed in a natural beef hose, smoked traditionally with beech wood, which stands out for its delicate scent and firm texture.

- In hot version: it is the ideal accompaniment for a gauge garnished, a cassoulet or a flat of lentils. It can be warmed up in a quivering water or cut in two and grilled to the pan (or fried) to accompany eggs on the dish.

- In cold version: Ingredient pillar of the famous Alsatian salad, it is eaten cut into slices or dice, mixed with Gruyère, onions and a casual dressing.
