Typical Alsatian specialty prepared traditionally. Gendarme is a type of smoked sausage made from beef fat and pork fat, with very firm flesh and crunchy skin to the bite, traditionally produced in southern Germany, Austria, Lorraine, in Switzerland and Alsace.
Salty, spicy, then smoked after drying, its characteristic taste comes from ground caraway which gives an aniseed note.
