Maison Entrecasteaux, Artisan Confectioner for 130 years is one of the oldest calissons factories in the Region.
Ancestral recipe: These calissons are made with melon from Provence, blanched almonds from the Mediterranean basin and candied fruit from Apt. All finely crushed according to tradition, placed on a bed of host then delicately topped with royal icing.
The Calisson d'Aix is one of the 13 Christmas desserts in Provence.
