Traditional recipe from the Sarthois region, a layer of cover fat protects them from the air and allows them to be preserved.

Cooking them for several hours and the particular care given to browning results in a subtle preparation. A set of complex aromas are then expressed, in which the scent of slightly caramelized meat juices, ample notes and a slightly peppery background mingle.
