The Norman hole.
The Norman hole a tradition that has its roots in Normandy 400 years ago.
It is said that drinking this eau-de-vie in the middle of a meal helps digestion, because it is sometimes very difficult to get to the end of a festive meal.
Tradition has it that the master of the house invites his guests to get up in the middle of the meal to raise their glass filled with an alcohol, usually Calvados, to smell it and then drink it bottoms up, the more daring can hum the anthem of the Trou Normand, which was composed in 1989 by Jacques Bauny:
“Friend raise your glass because here is the moment of a line and without manner to do the Normand Hole”.
But much more than a gastronomic interlude, the Norman hole has found its place in the organization of a meal.
The true Norman hole is quite simply a small glass of Calvados, but in its current version, the small glass of liqueur is accompanied by a sorbet.
