Marcel Charrade specializes in maturing Auvergne cheeses. It has three sites, including a former railway tunnel at Chapelle Laurent, where it refines cantal and salers on board. She sells 5 000 tons of cheese per year.
Auvergne PDOs: Cantal (including farmhouse Cantal), Salers, farmhouse Saint-Nectaire mainly… represent 75% of its volumes.
The range is completed by regional specialties. Marcel Charrade also offers an organic range (Cantal, Saint-Nectaire, Salers) as well as "all hay" versions for Saint-Nectaire and Farmer Cantal.
