It is in the Etoile du Sud artisanal cheese dairy located in Saint Christophe sur Guiers in the heart of the Chartreuse Regional Natural Park that around ten people work every day to make Le Saint Marcellin with its sweet and consensual taste.
Behind this cheese factory hides a real family history. It was created in 1992 by Robert Berruyer nephew of Marius Berruyer himself founder of the Etoile du Vercors cheese dairy located in Saint Just de Claix. Today it is Thierry Berruyer, Robert's son, who continues to keep the Etoile du Sud cheese dairy alive.
The specialties of the Étoile du Sud are made in the traditional way by cheese makers who respect authentic know-how. Some steps remain manual, such as the weaving of the mozzarella, or very artisanal, such as the production of the fromage blanc cake.
