Bottarga or Bottarga?

None. Two different terms to designate the same exceptional product, thousands of salted and dried mullet eggs. At Gérard Memmi, originally from Tunisia, it will be Boutargue with a "B" because the letter "P" does not exist in the Arabic alphabet.

A true family story, the Memmi company was created in the 1970s by Elie Memmi, Gérard's father. At the time the bet was daring. After a career as a water polo champion with the Tunis team, Elie began importing mullet eggs into France and developing a recipe, still kept secret, to obtain the very famous Boutargue. It was in 1989 in Ivry sur Seine, out of sight, that La Maison Memmi was established. In 1994, Gérard took over the management with the desire to preserve the know-how transmitted by his father and remains very attached to the quality of its raw materials.
