The secrets of the kouign amann recipe
Discover our gourmet recipe for real kouign amann. This typically Breton cake is very popular and appreciated well beyond the Breton or even French borders.
This Breton specialty is best eaten lukewarm in order to enjoy its soft and melting interior, as well as its crispy exterior, caramelized by the sugar.
Appearing at the beginning of the 19th century and originating from Douarnenez in Brittany, this round pure butter pastry is distinguished by its assembly of puff pastry interspersed with a butter and sugar mixture.
Kouign Amann is a cake unlike any other classic pastry: it was made following an error in a bakery. Its immediate success made it the emblematic cake of Brittany. Its crust, caramelized by the melting of butter and sugar during cooking, is made using a turning technique, which is difficult to master (layering of puff pastry).
Like all Breton cakes, it is made from simple ingredients and is eaten plain, accompanied by a good glass of Chouchenn.
Today we offer you a simple recipe to allow you to make this authentic Brittany pastry at home, and thus delight your guests by introducing them to kouign amann !
? List of ingredients :
- 250g of flour
- 200g salted butter
- 200g powdered sugar
- 10g baker's yeast
- 10cl of water
- 1 pinch of fleur de sel
Steps of our kouign amann recipe:
1️⃣ Preheat the oven Thermostat 5/6, 180°C
2️⃣ In a salad bowl, mix the flour and baker's yeast, make a well, pour in the lukewarm water. Work the dough, it should be just sticky to your fingers.
Leave to rest until the dough has doubled in volume. (A ball of bread dough can be used.)
3️⃣ Prepare the butter-sugar mixture, it must be homogeneous and have the same consistency as the dough.
4️⃣ Flour the work surface and the rolling pin to roll out the dough and spread it as thinly as possible.
5️⃣ Spread the butter/sugar mixture over the dough.
6️⃣ Fold the first time into thirds lengthwise, then a second time widthwise and flatten to remove air bubbles.
7️⃣ Fold into a triangle, put in a mold and let rise a second time.
8️⃣ Cut streaks on the top of the dough with a knife then spread the egg yolk with a brush on top of the dough to brown the whole thing.
9️⃣ Place in the oven for 20/25 min at 180°.
? Serve warm the same day, that's when it's best.
Enjoy your kouign amann with a bowl of cider, or a glass of iced Chouchenn. Chouchenn, usually eaten cold, is also delicious when served very hot, in a balloon glass, accompanied by a squeeze of lemon.
