This small edible seed comes from a well-known Mediterranean tree, the umbrella pine.
After flowering, it produces what we call apples, with tightly packed scales.
During the summer, with the heat, the scales part, allowing the harvest of these small almonds in autumn.
A beautiful apple contains around a hundred seeds. These are surrounded by a hard shell that must be broken delicately.
In the Middle Ages, mixed with almonds, pistachios, honey or sugar, it was used to make a treat that could be considered the ancestor of nougat.
Other recipes that require pine nuts: pesto, Provence chard pie, in salads, etc.
You can also make delicious pies.
Ingredients :
- 1 shortcrust pastry
- 3 eggs
- 100 gr of soft butter
- 100 g of sugar
- 100 gr of almond powder
- 5 cl of rum
- 1 pinch of salt
- 50 gr of pine nuts
1. Mix the 3 eggs, soft butter, sugar, almond powder and salt.
2. Pour this preparation into the tart base.
3. Arrange the pine nuts on top.
4. Bake for 40 minutes at 180°C.
