Lemon Bergamot: An amazing citrus fruit!
Coming straight from Morocco, it is under the sun of the Marrakech region that it manages to express all its taste potential and to develop its very particular perfume.
It is typical of this Mediterranean country: it is very difficult to grow it elsewhere. Even if some Mediterranean lemons look a lot like it, it is only in this region that we find this particular variety, more acidic than these cousins found in Tunisia and Palestine.
In Morocco it is called "Citron Beldi" (Limoun Beldi or Limoun Boussera in Arabic) and is used in many traditional dishes.
In particular, it brings a very particular aromatic touch to the tajines of the region.
? A confusing name:
Contrary to the name under which it can be found in France, this lemon has nothing to do with bergamot and is therefore not the result of a cross between the two species.
The name "Citron Bergamot" is only used in France, whereas it is often called Citron Beldi or Limonette de Marrakech abroad.
It is often compared to Bergamot for the particular fragrance of its zest. Limonette de Marrakech is however sweeter than Bergamot, and the comparison between the two citrus fruits ends there.

To recognize it on the stalls: this lemon is small, very round and plump with orange-gold reflections unlike the more yellow and elongated classic lemon. It has a pointed nipple on one side only, when the lemon usually has one on each side.
Its bergamot scent that makes it so popular is mainly contained in its zest. Its flesh is finer and sweeter than that of classic lemons, which makes it very pleasant to taste as it is.
