6 FOODS NOT TO EAT RAW

Raw dishes are particularly popular, whatever the season. However, not all foods lend themselves to this type of cooking. Some can even cause serious poisoning if eaten raw.

1 - THE POTATO

We love them sautéed in a pan, mashed or even fried. Potatoes are one of the most popular foods in France. Yet most people are unaware that they can be toxic. Indeed, in order to defend itself against parasites, the famous tuber contains solamine and chaconine. But once cooked, these toxins disappear. It is therefore simply necessary to avoid eating raw potatoes at the risk of suffering from headaches, vomiting, diarrhea or even fever.

2 - EGGPLANT

Like potatoes, raw eggplant contains solamine, a toxic molecule that can have serious consequences if ingested in large quantities. The younger the vegetable, the more it contains. It is therefore in a saucepan, in a frying pan or in the oven that we will cook eggplant to take full advantage of it. In a ratatouille or caviar, it's always a delight.

3 - CASSAVA

It is the favorite food of Koh-Lanta adventurers. But poorly prepared, it can be formidable. This root vegetable is full of vitamins and minerals but also cyanogenic glycosides, the toxin of cyanide. To eat it, you have to cook it well. The ideal is to grate it and immerse it in boiling water.

4 - THE FISH

Sushi, tartare, ceviche, raw fish has been a major culinary trend for years. However, this cuisine is not without risk. Indeed, fish can be contaminated by parasites such as anisakis. These worms are present in the digestive tracts but they can sometimes slip into the muscles and therefore be ingested. Poisoning occurs a few hours after the meal and is manifested by vomiting and diarrhea. For this reason, it is recommended to put your fish in the freezer for at least 24 hours if you want to eat it raw.

5 - THE CHICKEN

Poultry is one of the foods that should not be eaten raw. They can contain potentially dangerous bacteria like salmonella. They are found naturally in the intestine and can cause salmonellosis, an intestinal disease in humans. Campylobacter is another bacterium found on chicken carcasses. It is not very resistant to cold and heat, but can be transmitted by contact with raw food (in a marinade for example). In most cases, poisoning is mild. But it can lead to more serious consequences for vulnerable people.

6 - GREEN BEANS

Wouldn't you think of biting into a green bean? It's a good reflex. First, it may be difficult to chew. Then the green beans contain in particular lectin which can cause intestinal complications if they are not cooked.
