It is one of the most emblematic ash goats produced in the Center Val-de-Loire region.
Sainte-Maure-De-Touraine AOP is made only in Touraine, this cheese has existed since the Middle Ages. In the shape of a truncated conical log (slightly flared at one of its ends) with a length of 17 cm, it has a pretty dress of a deep gray slightly bluish.
But its particularity is to be crossed by a straw of rye which, originally, only allowed the good behavior of the cheese.
Today, the manufacturer's name is laser engraved on the straw and it is above all a guarantee of quality and authenticity. It should also be noted that there is also a Sainte-Maure (white goat's cheese log) which is not entitled to the appellation “de Touraine” because its production is industrial.
The goat's milk is curdled with rennet, salted with ash salt (traditionally ash from vine shoots), then matured for 20 days on wooden racks in a dry place. It weighs 250 g and contains 25% fat. Its taste is balanced, round, salty, slightly acidulous, melting, with slight aromas of nuts.
