However, it is difficult to make it simpler since five ingredients are enough to shape it: apples, sugar, butter, flour and salt (just a pinch). And for more than a hundred years it has inspired cooks and pastry chefs all over the world!
The Little History of the Tarte Tatin…
The origin of this pie is located in Sologne, more precisely in a small town in Loir-et-Cher, less than 200 km from Paris, the village of Lamotte-Beuvron.
We owe its name to two sisters, Stéphanie and Caroline Tatin. The latter ran the family establishment, the Hôtel Tatin (opposite the station) from 1894 to 1906. Caroline, the eldest, received customers, while Stéphanie busied herself in the kitchen, notably preparing famous apple pies. tender and caramelized.
It is said that one Sunday when the hunt opened, Stéphanie forgot the dough and in the heat of the moment, shoved her mold filled only with apples and sugar. Realizing her omission, she simply added the dough over the apples and finished baking the pie like this.
