The Panettone has not always had its current form. Originally, it was less high and no parchment paper mold was used around its base to give it its vertical shape.
In the 1920s, Angelo Motta changed the situation. He enriches his Panettone with butter and uses baking paper for the first time to give it that typical high shape.
Nowadays, you can still find low Panettones in some areas (Le Pandolce in Liguria, for example), alongside the higher and more widespread Panettones.
The Pandoro is another type of Christmas dessert, of Veronese tradition.
Unlike the Panettone which has a round base, this one has an eight-pointed star-shaped base. The Pandoro is not garnished with candied fruit which makes it lighter and more airy.
It is generally sprinkled with icing sugar before tasting it, quite simply.
