Another historical and tasty anecdote!
In Nancy in the 18th century, the nuns of the Visitation made small cakes in honor of King Stanislas of Poland, who became Duke of Lorraine and father of Queen Marie Leszczynska (wife of Louis XV).
According to other sources, these Visitandines come from the Middle Ages, created in a convent in Nancy.
In 1890, the financier made his appearance in the now prosperous pastry scene. It's actually a winning comeback. Lasne, a Parisian pastry chef, has set himself the challenge of bringing these cakes up to date.
No question of touching the basic recipe: almonds, sugar, butter, flour and egg whites. But the shop is a stone's throw from the Bourse, so its customers are mainly financiers looking for easy-to-eat, non-messy snacks.
The cake is exactly what they expected. The pastry chef decides to change the shape of the financier. Usually oval, it becomes rectangular, shaped like a gold ingot.
It is a success, still appreciated today.
