The merguez
The Alsatian settlers settled northeast of Constantine would have invented it: for lack of pork, they would have replaced the ingredients of the sausage with beef and lamb, and would have used wine to give it its red color.
It was introduced in France by the Pieds-noirs in the 1950s.
