Do you know the Alsatian Fleischschnacka?
Excellent dish idea to offer to your guests (or just for you…) during the autumn/winter season, Fleischschnacka are one of those traditional Alsatian dishes that we love!
But above all, why "Fleischschnacka"? Well because in Alsatian dialect, Fleisch means meat and Schnacka, snail.
With their spiral shape, like that of the snail, no need to look for noon to two o'clock: the name was found!
At the time, Fleischschnacka were served on Mondays, in order to accommodate leftovers from the Sunday stew. The preparation of Fleischnaka takes a little time, but is really not complicated.
This is a noodle pastry topped with boiled meat (the famous leftovers from the pot au feu). The whole thing is rolled into the shape of a large “sausage”, sliced and then cooked in the broth.
