We owe them to the famous mother Blanc, whose grandson, Georges, is today one of the most famous chefs in France. Elisa Blanc was born in 1883 in Ain, she took over the family inn in Vonnas and saw herself awarded 2 stars in the Michelin guide in 1933.
The prince of gourmets, Curnonsky also considers her to be the best cook in the world.

Ingredients :
- 500 gr of potatoes
- 30 cl of milk
- 50 gr of butter
- 50 gr of flour
- 3 eggs and 4 whites
- Salt pepper
1. Cook the potatoes
2. Pass the pulp through a vegetable mill
3. Add milk, butter and flour
4. Add the eggs
5. Heat a blini pan with a little clarified butter and cook the pancakes
6. Keep them warm in the oven
