The mint sauce recipe.
An iconic dish of English “gastronomy”, lamb with mint probably has its roots in medieval cuisine, at a time when herb-based preparations were very common.
This type of sauce was found in France, but also in Italy and obviously in England.
There Queen Elizabeth I helped combine this sauce with lamb. In order to preserve livestock to produce wool, she decreed that lamb could only be eaten with bitter herbs (of which mint was one).
The recipe then spread and became a classic of English gastronomy.
To make the “mint sauce”, it is best to use peppermint. Thanks to settlers, this recipe can be found in other countries including New Zealand, famous for sheep farming.
