An iconic dish of English “gastronomy”, lamb with mint probably has its roots in medieval cuisine, at a time when herb-based preparations were very common.
This type of sauce was found in France, but also in Italy and obviously in England.
The recipe then spread and became a classic of English gastronomy.
To make the “mint sauce”, it is best to use peppermint. Thanks to settlers, this recipe can be found in other countries including New Zealand, famous for sheep farming.
Ingredients :
- 1 beautiful bouquet of peppermint
- 50 g of sugar
- 10 cl of vinegar
- ½ lemon juice
1. Chop the mint
2. Bring the vinegar to a boil and add the sugar
3. Off the heat add the mint and lemon juice
