MERGUEZ, SPICES AND LOVE
If you can find other animal species (whose presence must be explicitly mentioned on the labeling), the "real merguez", as defined by the code of uses of #charcuterie, is made from meat and beef and/or mutton fat excluding any other meat and stuffed into lamb casings.
The merguez is also characterized by a seasoning mainly based on paprika, turmeric, sweet and hot peppers, but also, depending on the recipe, garlic, coriander, green anise, cumin, oregano, even mint. “The right balance between fragrant character and spiciness is difficult to find”.
The merguez has a superior quality Label Rouge "Genuine merguez", justified by the use of Label Rouge beef and a high proportion (between 20 and 30%) of sheep meat. The coloring is only due to the use of spices such as paprika, turmeric and chilli; the use of additives is prohibited.
