The best-known story is as follows: in 1755, Duke Stanislas Leszczyński, ex-King of Poland, decided to give a reception in his castle. However, his cook, after a heated argument with the steward, is said to have left with the dessert originally planned for dinner.
It was then that a young servant of the Marquise Perrotin de Beaumont, #Madeleine Paulmier, would have offered the family recipe for a small egg #cake . Having no other choice, Stanislas would have accepted.
Against all odds, the assembly would have enjoyed this #dessert . Relieved, the duke would have liked to be introduced to the young lady and to thank her, would have decided to give the name of the young woman to the dessert. This is how the madeleine would have been born.

Several hypotheses have emerged, but none particularly satisfactory: some say that it would come from the thermal shock between the heat of the oven and the cold of the dough (but this was refuted). Others think that this swelling is due to too much work of the dough.
The most widespread hypothesis explains this bump with the mould: it would appear where the mold is deepest, where the baking powder content is the highest.
