This breakfast and brunch star was born in New York in 1892 in a famous palace: the Waldorf.
The recipe was created at the request of a customer, Lemuel Benedict.
Her success was immediate and the chef gave this preparation based on eggs, muffins, bacon and Hollandaise sauce, the name of the person who composed it.

- 4 muffins
- 4 eggs
- 4 slices of bacon
- 2 egg yolks
- 100g butter
- ½ lemon juice
1. Poach the eggs for 4 minutes in boiling vinegared water.
2. In a saucepan, gently heat the egg yolks
3. Add the very cold butter in small cubes
4. Finish with ½ lemon juice
